Lasagna was not one of those recipes UNTIL today. My very own version. You may note there are two pans; one for home and one for sharing. If you want to make just one (no fun) then you can cut the ingredients in half OR make a really big Hearty Lasagna with the specified ingredient quantities—as always the choice is yours!  😉

On a side note, my son and I don’t particularly care for the term “wheelhouse” so of course he will get the reference to this title right away. It is the little things we share with our families and the joys of home cooking that mean so very much, in this woman’s humble opinion!

Wheelhouse Lasagna
Ingredients
Instructions
  1. In a large skillet brown your ground pork, sweet italian sausage and ground turkey with the onion & garlic. Drain the fat (if you want, fat is flavor) and add the crushed tomatoes, tomato paste and 2 tbsp of the dried parsley (crush it a little in your hand to release the oils before adding). Combine with the meat mixture and simmer on low for 10-15 minutes while you prep the rest.
  2. In a mixing bowl beat your 2 eggs with a whisk or fork. Add the ricotta cheese, 1/2 cup grated parmesan cheese and the remaining tbsp of dried parsley (again rub in your palm first to release the oils) and combine.
  3. Start the assembly! Put a thin layer of the meat mixture on the bottom of your lasagna pan. Add 6 lasagna noodles on top, overlapping if necessary. Add meat sauce over the noodles to cover all noodle surface. Add a layer of the ricotta cheese mixture on top followed by a sprinkle of the parmesan and half of the mozzarella. Repeat ending with the mozzarella cheese on top. Sprinkle a little parsley for color and flavor on top of the mozzarella.
  4. Bake in a 350 degree oven for 30 minutes. Turn off heat and let the lasagna sit in the oven for an additional 10 minutes to rest.
  5. Last but definitely not least! Bring that Delish Lasagna out of the oven and again let it set for an additional 5 minutes or so. Plate on a festive plate and serve with a nice salad and beverage of your choice. Enjoy!

I mean who has 3 hours on a weeknight to make dinner, sometimes a weekend night for that matter. But somehow even as self-induced busy human beings the thought of a nice long Sunday Night dinner either brings up nostalgia of days gone by or an aspiration to get our family around the table sans electronics and the like and just “be” together. I take great pride in providing, nourishing, healthy meals for my family everyday (almost everyday, sometimes my Golden Arches fry fetish gets the best of me  😉 ) but there is just something about the Sunday Night dinner that amps up my pride as I look at it as also nourishing their souls, I guess that is just the old fashioned gal in me and I’m not complaining!  🙂

Beef Tips & Veges
A Big Pot of Love ♥

  1. Bring your stew meat out of the fridge and let it sit for about 5-10 minutes while you prepare your flour/dredging mixture. This will take the chill out of the meat and is better for the browning/searing process. In a plastic bag combine the flour, one tbsp of the pepper, garlic powder and a pinch of salt. Add your stew meat, seal the bag lid and shake it all about. Do the Hokey Pokey if you like, this is a no judgement zone.  Make sure to coat all of the meat. Set the meat aside. In a cast iron pot or any regular pot, add a few tablespoons of olive oil and heat it up on medium heat. Add about half of the meat and brown on all sides. Depending on how many pounds of stew beef you are searing, please do this step in batches to keep the heat of the oil nice and hot and ready for searing. After all of your meat has been seared, remove from the pot and set aside.

  2. Add the remaining two tbsp of olive oil to your pot and add your diced onion. Let the onion cook for 2-3 minutes and then add the garlic. Saute the onion and garlic together for another minute or so, add a little more flour from the dredging mixture, about 2-3 tbsp and combine with the onions and garlic. Add the sherry to deglaze the pan, picking up all of those oniony, garlicy bits off the bottom of the pan. Add your stew beef back into the pot and add the beef stock and stir all the players together. Bring to a boil for about 3-5 minutes to thicken the sauce. Lower the heat to low or just above, cover your pot and let that meat do what it does best cook low and slow for 2 hours. Stir occasionally.

  3. This step is purely optional! But I thoroughly recommend it! Pour yourself a glass of wine and read a good book.  😀

  4. Now that the 2 hour mark has arrived. It is time to add the veges. I cut the veges pretty small because I want them to cook a little bit quicker as your family is pretty much probably starving by this time and the smell in your kitchen that has permeated the house is probably driving them crazy. I know every time I went to stir the beef my husband would say “when is dinner going to be done Woman?” To which I politely replied (politely, that’s funny), soon honey, soon.  😛 When the veges have been added to the pot, add a tbsp of the dried parsley, crushing it in your palm first to release the oils. Add more salt and pepper to taste and let them simmer for 30 minutes.

  5. At the 30 minute mark, ladies and gentlemen start your grits. Follow the directions on your grits package but basically boil 4 cups of water. When the water is boiling slowly add your grits and a pinch of salt or two and whisk away. Turn your heat to low and let the grits thicken for about 10-15 minutes, whisking occasionally. When they are to your desired thickness, add the butter and cheese and a little salt and pepper and combine.

    When all is said and done it is as always time to plate. Put a little (or a lot) of those cheesy grits to line the bottom of your bowl and add to your heart’s desire the beef tips, veges and gravy, sprinkle with a little dried parsley and Enjoy! This is the first time I am using my new recipe plugin so be merciful with your comments, I will try to get this right! Second Helping Pasta Bake Lasagna-WMR
I originally called this recipe Pasta Bake Lasagna UNTIL I tried it! I am usually a one serving only girl but this recipe sure at least put me into the 1-1/2 serving girl category tonight!

  1. In a large skillet brown your ground sirloin and sweet Italian Sausage. Drain the fat and add the crushed tomatoes, tomato paste and 2 Tbsp of the dried parsley (crush it a little in your hand to release the oils before adding). Combine with the meat mixture and simmer on low for 10-15 minutes while you prep the rest.
  2. In a mixing bowl beat your 2 eggs with a whisk or fork. Add the cottage cheese, 1/2 cup grated parmesan/romano cheese and the remaining Tbsp of dried parsley (again rub in your palm first to release the oils) and combine.
  3. Start the assembly! Put a thin layer of the meat mixture on the bottom of your lasagna pan. Add 6 lasagna noodles on top, overlapping if necessary. Put a layer of the cheese mixture on top followed by half of the fresh mozzarella. Add a layer of meat sauce. Repeat ending with the meat sauce on top.
  4. Ok!! Now here is where I veered off course and instead of the normal layer of cheese on top I did the unthinkable and turned this lasagna into a bake and here's how. Melt the butter in a little saucepan and add the breadcrumbs and combine, stir in the parmesan/romano cheese and sprinkle on top of the meat mixture.
  5. Bake in a 350 degree oven for 30 minutes. Turn off heat and let the lasagna sit in the oven for an additional 10 minutes to rest.
  6. Last but definitely not least! Bring that Delish bake out of the oven and again let it set for an additional 5 minutes or so. Plate on a festive plate and serve with a nice salad and beverage of your choice.

Now here is your "Bonus" Salad recipe and seriously this is more than a salad (well not technically). My Husband LOVES this salad and I swear whenever he thinks of leaving me this salad comes to his mind and I am safe for another day!

  1. Wash your greens, shredded carrots, tomatoes and mushrooms.

Transfer to a bowl preferably with a lid for mixing and add a good splash of Balsamic Vinegar (this is the big secret...shhhh) and a sprinkling or two of parmesan cheese or whatever you have on hand. Here is the second secret add about a 1/2 cup of, of, of, oh alright Good Seasons Italian Dressing--the kind you make yourself in the carafe you can buy for a few dollars. Close the lid, hold and shake to blend all together. Taste and add more dressing if needed, remember you can always add it but not take it away. IMG_1791IMG_1792

A few more notes:

  1. I have used the no cook lasagna noodles many times and find that if you make sure to cover all ends there are no dry brittle parts. I learned this by trial and error.image
  2. When you layer your fresh mozzarella, stagger them between layers so that every bite has some of that ooeeyy gooeeyy goodness!imageimage
  3. Lastly, even if there is just water in your glass garnish it and make sure it looks pretty!  🙂

  4. As always season to taste. I didn't add any salt to this recipe, because there are already many sodium filled ingredients. I did however add plenty of pepper to my meat mixture, as it is no secret I am all about the pepper!
